Milk represents one of the largest food allergens, especially for children and is therefore important that products are labelled correctly. The risk of hidden proteins in food such as sausages, cookies and ready-to-eat meals represent a critical problem for allergic people. Approximately 80% of bovine milk proteins are composed of α, β, and κ-Caseins which are heat stable, retaining their potency after food manufacturing processes.
AgraQuant® Casein is a sandwich enzyme-linked immunosorbent assay (ELISA) that determines a quantitative level of Casein residue in raw and processed foods, rinse waters and environmental swabs. The kit is supplied with standards, antibody coated microwells, extraction buffer, wash buffer, conjugate, substrate and stop solution.
