Hazelnut (Corylus avellane) also known as filbert or cobnut, belongs to a group of tree nuts which contain proteins which can trigger allergic reactions in some people. Hazelnuts are used within the food industry as an ingredient in many products including bakery and cereals items. Cross contamination in the production area due to inadequate cleaning procedures and contaminated ingredients are both important food safety concerns.
