Mustard belongs to the Brassica family of plants and the seeds contain a high proportion of protein (30-35%) and when ingested can trigger allergic reactions including anaphylaxis. These proteins are predominantly heat resistant, making them stable to different production processes, retaining their potency and therefore a food safety concern.

Each test kit comes with a plate contining removable antibody coated wells, extraction buffer, diluent, Soy protein standard, wash solution, horseradish peroxidase (HRP) conjugated antibody, chromagenic substrate solution, stop solution, 

Swabs for surface testing are available separately.
